Wanted to post a followup to my issue (noted above), in case anyone else runs into the same problem I didn't want to leave you hanging.
I enabled TRIM over the weekend and have not run into the issue again. Running activity monitor, it seems like the problem consistently popped up with Safari suddenly taking up a huge percentage of the processor, so I think this is a Safari issue and nothing to do with the drive or computer itself.
If the problem comes up again, I'm going to just start using Chrome, I guess. Not that there's anything wrong with Chrome, but it's a shame that the native OSX client gives me such problems.
Next up: RAM upgrade.
