So further update -
UPS App states "Rescheduled Delivery, Monday, November 01, By End of Day"
UPS Website states "Estimated delivery, Monday, November 01 between 8:45 A.M. - 12:45 P.M."
Don't know what to believe anymore. According to the tracking, its still sat in Feltham.

Mine shows "Monday, November 01 between 10:15 - 14:15" , not sure how much of a finger in the air this is will turn out to be.

Guys with UPS. It might be just speculation but it seemed like tracking the parcel via phone set a hard refresh to the tracking, bringing it up to date. Try to call them and see what happens. Last option of the answering machine.

mine says out for delivery, yet the website doesnt, nor does the app...
I suspect because these deliveries are "late" due to the mechanical failure, they are just getting them out asap without scanning them.
UPS delivered mine before 9am! So chuffed to have this so early in the day.
For anyone else who wants to know about shipping times, mine is a 16” M1 Pro 10/16 BTO, with 32Gb RAM, 2Tb SSD, and a US keyboard layout.
I ordered it immediately after the keynote (15 mins?) and original ship date was “8-11 Nov”.
It actually shipped 25-Oct, at which point delivery date was “01-05 Nov”.
However, it got caught up in that UPS plane with the broken nose wheel, so didn’t actually depart until 28-Oct, at which point delivery date was “29-Oct”.
It arrived Donington UK, then departed towards me, by 7am 29-Oct - when another delay was encountered at Tamworth.
I then had no update until today (1-Nov) saying it was out for delivery at 7:21, from a place 25 minutes away. Got here at 8:40.
So in summary: it arrived a week earlier than initially promised, and took exactly 7 days from Origin scan in China to my door - which included covering a weekend.
Finally - I would suggest ignoring any dates the Apple Store app or website gives you, once it’s with UPS. Just go with the UPS updates. Apple clearly go on the UPS dates, but it can take a while to update at their end - and where any uncertainty is encountered apple just fall back on the original estimated date anyway.

Hold tight, it appears as though tracking is not getting updated but is still moving. Mine is showing as stuck in Feltham, but is supposedly on the move for delivery today.
I just kept checking on the website/app.
No one here can tell you, your best bet is to call UPS customer service or try on social media, does your app / site say out for delivery?
My tracking history didn't update all weekend, then this morning I got updates from the past that I couldn't see.
