I've not had to try it yet but as the watch can only be paired with one phone at a time I suspect you will need to un-pair it from your current phone and then pair it with the new one. What you should do is make sure you have an encrypted back up of your current phone first if you're going to restore from a back up as opposed to setting up as new. That way all your data including health stuff will remain intact.
So it goes as below:

1. Make encrypted backup
2. Unpair  Watch
3. Turn on iPhone 6s Plus
4. Restore from encrypted backup
5. Pair  Watch with iPhone 6s Plus

Is that right to preserve all health and activity data?
 
You do have the options to leave with neighbour, which I've done mid-delivery before. I'm not sure if it'll be allowed for the iPhone deliveries though! You may also be able to upgrade your delivery and change the timeslot, as someone posted earlier, or have delivery to a nearby 'pickup shop' (but not sure myself if that can be done on the same day as first delivery!).

As far as I'm aware Apple is very strict about that and won't let couriers leave packages with a neighbour. Upgrading the delivery, changing the time slot or local pick up may be an option. Unfortunately you can't see what the options are until your tracking appears on the DPD web site. As soon as it does I'll have a look at the options.

Who was it here that wanted to change models from 16 to 64gb? This could be ideal for them.

JL click and collect is great - I collect stuff from Waitrose a lot as more convenient than going into city centre and free parking :D

I get cashback in John Lewis with my Santander Card, unfortunately John Lewis is 2 hours from me and i have an event on Friday this is very tempting
 
I'm tempted to return the Apple one after a week or 2, at which point I should be able to walk in to a John Lewis store and buy one - along with my cousin and their 12.5% discount :D. (That's assuming iPhones aren't excluded from their discount, since iPads aren't).

You wouldn't need to collect on Friday I wouldn't think - they usually hold for a few days.

I wouldn't count on that (I.e. walking in and picking one up) They'll prob go in and out of stock quickly like they did with the retina MacBooks in May. It took them ages to restock GoPro's that sold out before Christmas. I waited weeks and weeks to get mine. Was not in huge hurry and wanted the 2 year warranty so wasn't big deal.

Not bad if you can get that discount. Might struggle to get walk in stock seeing u online numbers seem so. Think the rose gold 6s+ 64gb has 6 left according to their page.
