I was already thinking of sticking it on ebay or something as I'm sure the 8gb I'm running is plenty at present.
 
mixing them should be fine.

As long as each pair is matched, you can mix brands and sizes.

However, I'd be interested to know if there is any performance difference having mixed brands compared to all matched modules? (eg. pair of Apple,pair of crucial, pair of OWC etc compared to 8 Apple modules).

Do you match them on the same riser, or do you have one identical module per riser slot? (eg one in A1, one in B1)

The user manual for the early 2008 Mac Pro says that, with the exception of the 2GB (2 x 1GB) stock configuration (where 1 module is in slot 1 of each riser), the modules should be installed in pairs in the following order:

A1&A2
B1&B2
A3&A4
B3&B4

ie. if you add 2 modules to the existing 2, you need to have:

A1 - stock memory
A2 - stock memory (moved from B1)
B1 - new memory
B2 - new memory

The next pair would be added to A3 and A4, etc
