how do you remove the beta profile and what are the benefits of doing that?
I don't know of any benefits, but I wanted to anyway. To remove from iPhone go to Settings -> General -> Profiles -> Select Profile and then delete. Restart device. To remove from watch go to Watch settings on iPhone -> General -> Profiles -> Select Profile then delete. Restart device.

Coming from 8.4? Or from a previous iOS9 beta? Because I had to do the restore and lose some data dance going from 8.4 to 9.0 GM.
I went from previous beta, but with that being said. For iOS 6 and iOS 7 i upgraded to GM (specifically GM) from the previous version. So iOS 5 > iOS 6 GM and iOS 6 > iOS 7 GM. Cant imagine this year is any different.

So I have the profile installed and am running on watchos2 beta 5 but every time I try to update it says I'm running on the current version >.< I just installed the IOS 9 GM on my iPhone 6.

But what happened when you clicked check for update?

On an 8.4.1 device, check for update naturally says "You're on the latest version" (whether or not you hold down option). To upgrade a release device to 9.0GM you have to do the option-click on "Restore iPhone" and then select the software restore image.

Something is wrong then. No matter what version of iOS you are on. When you option click check for update something will always pop-up. I just did it on my iPad running 7.1.2. Still gave me the pop-up window.

OK, how bizarre. I can repro this myself but I swear I just did this two hours ago and it did not do offer the file selector. I was at work then, not at home (where I am now) but huh... I can't explain it. You're probably right.

So, I installed ios9 and restored from a backup I took today. When I opened the Watch app to download 2.0 it started setting it up like a new watch but saw a backup from my previous one. I hit restore, it did it's thing, and now all my activities are randomly gone. Is this data loss expected or did I do something wrong?

That's normal if your backup was not encrypted. The health data is only saved in encrypted backups (surely some HIPAA requirement).

Anyone else having issues installing the newest Watchos2 GM? I just can't figure out what's wrong =/ It never shows up on my phone. Should I install the profile to the watch instead?

Holy crap it's been downloading for over 6 hours now, and says there's still 6 hours to go. Should I restart my phone or something? This is taking forever.

If I install iOS 9 GM will I HAVE to install WatchOS 2 GM or will it work OK on 1.0.1?

Off topic, but I just got an email from AppleSeed to download El Capitan GM (Public Beta). Now it makes zero sense that there wasn't an iOS 9 GM for PB.

I forgot how long this update process takes.

Way too long. Did two watches, took about 45 minutes to an hour each, AFTER the download and preparing.
