Double-wrapped Tacos. These were mentioned in the latest
Cooks Illustrated, where refried beans are spread onto a flour tortilla, which is then wrapped around a filled, crispy taco shell, and consumed. I know I've seen something similar on fast food menus, but not sure what they're called.
CI suggested cracking the corn shell in half and laying it flat, making it easier to fill:
I made two that way, and filled the third one from the top, intact; sixes either way. They
are filling, only needed three for a good lunch:
The Good: if the taco shell shatters, the flour tortilla and "bean glue" keep it all intact; very easy and neat to eat.
The Bad: even in the short time it took to assemble these three, the refried beans starts softening the taco shell, less crunch, and by the time I bit into the last taco there was no crunch whatsoever. That was disappointing... a nice variation, but won't be making tacos this way all the time. TFL.
