Hmmm, past midnight here now, but I'll try and remember to take a few pics tomorrow. The setup in my office is very much a work in progress - I've been on the road most of this year so I've not had the time to work on it. The office is where my PM and cinema displays are. My PB is used on the road and at home and in the office. The mini and the 1TB drive are in a kitchen cupboard in the house (yes really!). I just put Tiger server on on the mini.

Living in the uncultured US, and Wisconsin to boot, I'd have to say my favorite cheese is Colby cheese, which originated less than two hours from where I live. Tasty stuff, it is. :D

HF is like.. ash cheese, blue cheese, and a soft brie all rolled into one awesome wheel of goodness.

I had a fried brie once that was awesome:

Wedge of brie, sliced in half, stuffed with sweated shallots and herbs and put back together again. Dredge in flour, egg, bread crumbs then fried. Yummy.

I love all sorts of cheeses, but I'll have to say that my favorite so far is dill havarti. Every once in a while I find a good one out here that is imported from Denmark. Much better than the American made stuff.
I had some excellent cheese once when I was in Stockholm, I wish I knew what it was. It had a mellow, nutty flavor, sort of a mix between havarti and swiss. Anyone have any ideas?
I have to say, one of the most revolting things I have ever had in my mouth is French goat cheese (chèvre). I was in France a few years ago and some people I met there gave me some to try. It was all I could do to choke it down. It was all hairy on the outside and tasted like that awful smell that female goats emit when they are in heat. Truly an unpleasant experience.

I thought Haloumi cheese was Greek (Cypriot, actually). I have a friend from Cyprus, and tried haloumi for the first time while visiting him. It's awesome if you slice it thick and fry it golden brown in a frying pan. It's not as good raw...
 
OOHHH you know what you are right, I got confused a friend of mine who is georgian made me try it.
 
I love Gruyere. I always take a big hunk of it backpacking because it holds up well without refrigeration. Jarlsberg is a close second favorite.

I like Feta in salads and omlettes, and I like LOTS of parmesean cheese on pizza and pasta.

Indeed. Even us crazy Minnesotans appreciate the tastiness of Wisconsin cheese.
 
Ahem!

Great to be so welll thought of as to garner a thread of me own!! LOL. Seriously, I will have to say GOUDA!!! Awesome in any form as long as it is not rotted. Smoked cheeses are great as well especially provolone. Wensleydale is great too, but hard to find in the southeast US. Real French Camembert is blissful, and I'm hungry.
 
Yellow: Yes, Humboldt Fog is amazing! That's probably my favorite, but I also love a good gorgonzola, camembert, and of course, parmigiano reggiano!

I ordered a buncha cheeses off there and let me tell you, they have some really high quality cheese! The Green Hill and Georgia Gouda are freaking fantastic!

Reading about this makes me want to try to actually make cheese. Intentionally that is. I've had milk go to cheese in the fridge but was afraid to try it.
