Mojave, because I'm using Adobe CS6, Aperture and iTunes.
I reverted back to Mojave 10.14.6 on my 2019 15" MBP after retiring it and getting my current M5 Max. I'm able to run old 32-bit Mac apps, Bootcamp into Win10, and still run WinXP/7/10 in Parallels as a legacy system for old apps and games. I've got CS6 and iTunes (and Dashboard) working flawlessly as well.
 
I probably would be running Sequoia if it were not for the fact that the Sequoia Messaging app does not filter out spam texts. I have an app on my iPhone "Sifter" that does an excellent job there, but only the Tahoe Messages app respects the Spam category. I want to keep my M2 Air running fast for as long as possible.

Just out of curiosity, why not Catalina? The "major" redesign didn't come until its successor, Big Sur.

I really liked Mavericks, and later Mojave and Catalina, too.
Catalina dropped support for 32-bit apps, Catalina started using read-only system volume making it more difficult to create easy backups/clones of system, Catalina removed iTunes (which people had been complaining was bloated) only to be replace with really crappy standalone apps for TV, Music, Podcasts, got rid of Dashboard, and probably other stuff I forgot.
 
Sequoia. I honestly meant to switch to Tahoe in the spring but never got around to it. Maybe this weekend I'll make the jump to at least try it before Golden Gate is officially released.

Are you even still able to authenticate Adobe CS6 on a Mac? I tried to install CS5 on a Mac some years ago, and ran into the problem of the authentication server not even being available or properly working...

Sonoma Will no longer receive security updates after September of this year, while Sequoia will still be supported through September of 2027. That’s a reason right there.
security is what the user can control as my intel macs still run Mojave without a worry of losing, hacking or being infiltrated. if we all adhered and obeyed what tech CEOs claim we would buy a new laptop every other month!

On my daily driver I use Tahoe. On the late 2012 Mac mini (16gb ram/512gb ssd) which I use for all older software I run High Sierra and with bootcamp Windows 7 pro.

Yes I can still authenticate it. It has to be be done offline because CS6 isn't supported by Adobe anymore.
