When they spoke about spatial awareness for the AirPods, she showed a call screen that was the normal old one so I’m betting it’s only for the iPad...

Not sure I am a fan of this new MacOS. Guess I'll look harder into iPad Pro when my 2013 MacBook Pro goes. Looks exactly like iOS

I think they are aiming for a unified look. If they expect to expand sales of Macs to current user of iPads and iPhones, this makes it look more familiar to them.
