Up time about an hour. Yeah I saw some temps on that thread were in the 70's but now I'm at 78..

171F is actually very close to 78C

So, don't be worry, you are not alone. As long as the system stable, no need to care it too much. The NB is rated above 100C (from memory 105C), even 80C still far away from overheat.
Thanks I'll keep that in mind. I just wanna give it a good stress test and see how everything performs. So (hopefully) I don't run into any problems when I start working on a major project I have lined up.

I am running dual 3.06 GHz 6-core "Westmere-EP" (X5675) Intel Xeon processors in a 5,1 and they show roughly the same temps. It's been stable for years.
When performing an SMC reset, does it take a while for the system to "re-learn" optimum fan speeds?

No, I just did an SMC and pram reset a few days ago to diagnose a different problem. Was just wondering because I haven't really looked at my temps lately (until after the fact). Was just curious.

Macvidcards, I'm using uningine to stress test the Titan X you flashed for me. Do you know of an app to monitor its temps? Istat menus is a no go.

That seems a bit high to me. The temperature usually stay at around 85C. Not sure if the dual processor model will allow the CPU temperature to go up for another 5C. Anyway, the 85 is observed from my W3690, since the X5690's temperature is 10C higher than my W3690. May be the system automatically adjust for that and allow the CPU run few degree warmer and keep the fan as low as possible. (This is normal, the SMC will try to keep the Mac Pro as quiet as possible, but just maintain the CPU at a temperature that not overheat)
Anyway, as long as it's stable, there is not much to worry about, the Intel XEON are very reliable. They will throttle themselves if require.
On the other hand, If you want better cooling, you may install the fan control software and setup your own fan profile.
For GPU temperature monitoring. You need FakeSMC in OSX, I personally won't recommend it, a bit too complicated to setup. Therefore, the next option is to run the test in Windows. Unigine benchmark software will display the GPU temperature in Windows automatically.

My personal guess, most likely the Mac is working backward from the "processor hot" temperature, it will try to keep your CPU around 10C away from it, regardless what's the actual temeorature.
As long as your processor is not that close to overheat, the fan stay idle to keep the quietness.

How do I remove the spring rivets without damaging them? Are they finger tight?

You have to unscrew the mobo from the aluminium tray and when you push the rivet, you should be able to pinch the ends, so it will go through the hole,..hopefully the rivet won't break, if it does you will have to use something else.
