Expedited shipping was an option for me, though it was buried in the order process. It did not speed up the actual shipping at all, if it did anything it may have sped up the processing (build?) time a bit. Not sure.
Like previous MacBooks I've ordered, they come from Shanghai and are shipped via FedEx International Priority DirectDistribution.
This method of shipping should take approximately 2 days once it's picked up. If you get the dreaded "Package Received after FedEx cutoff" message in your tracking, it's probably safe to add an extra day.
The estimated delivery date on the FedEx tracking is very much an estimate. Mine was delivered a day earlier than the initial estimated delivery day.
As far as Apple's order system; my order did not spend much time in the "Preparing for Shipment" stage ... maybe 12 hours. I received notification from FedEx Delivery Manager about 6 hours before my Apple order status went to "Shipped" (and I received the subsequent Apple e-mail w/ tracking info) in Apple's system.

I'm not sure when my card was charged.
