Has anyone expecting delivery in the UK progressed beyond dispatch from Cologne? It originally said about 4am but then changed to 9am, which was odd but not done anything since.

No we're just discussing the most recent entry in the UPS tracking, they came from China, via Korea and Kazakhstan to Germany.
They finally got a departure scan at 4am this morning which was then amended to show departure around 9.30am and we've had nothing since. So they departed but didn't arrive in the UK according to the tracker.
See below, note there have been various public holidays over the globe at the start of May which may have delayed things.

Mine finally shipped from Shanghai at 3pm today. Apple estimates delivery on the 8th of may (sounds optimistic??) while UPS's tracker says monday 11th of may.

I think you should go with UPS - they are the ones delivering the package. Apple is just showing an estimate based on the info they have from manufacturing/shipping and that will most likely update at some point to sync with UPS' understanding of things.

That's annoyingly normal, Apple tends to ship Macs from China to Europe on a slow UPS service. It's called "Expedited", but it is not the fastest option. There'a also usually no way to upgrade the shipping (particularly in this case because they used "World Ease" where multiple shipments are aggregated together to simplify customs/distribution).
Friday was a holiday in China and Europe (ex UK) and Monday was a holiday in the UK, plus the weekend.
I strongly suspect that all of us expecting a MacBook in the UK tomorrow, are part of the same shipment (see previous comment about "UPS World Ease"), so I would be fairly surprised if any of them show as having progressed beyond Cologne at this point.
I also assume that UPS has a plan to get them to us in time - if not their systems would easily be able to project a missed delivery deadline and would say that the packages were Delayed.
I can't even get any tracking information. UPS can't find my order number when I type it into the 'Track by Reference' page. The apple tracking facility has two separate codes (neither of which work with UPS) and provides the following explanation:

If you are told this then you may be able to track it via Syncreon. Often you can find the 'container' tracking and then you can track that via TNT/USP, etc.
