As a videographer myself, the 16 Pro/Pro Max are definite no brainers. LOG/ProRes video recording and external ssd recording are huge gamechangers [i have a 4TB self-made SSD that does this well, meaning i can keep my phone at 256GB instead base]. 4K 120 also is an added bonus, as i shoot pro res on my main rig which costs a lot more... this is a huge addition that i can utilize in my workflow.
For the extra 200$ [base spec phones], that's a lot of features you'd get [that even on modern cameras you'd have to fork out an extra 1.5-2.5k+ for that functionality. If anything 16 and 16 Plus are expensive and the Pro/Pro Max is much more better value.
