It's weird to me that people act like America/American only refers to a country and not a continent/pair of continents.

Canadians and Mexicans live in North America too - it is thus appropriate to also call them Americans. The Gulf in question is completely surrounded by North America, and appropriately called the Gulf of America. It's not the Gulf of USA. Calling it the Gulf of Mexico was silly when only ~50% of its surrounding land is Mexico.

The name Denali predates McKinley by centuries. Alaskans and their government was still calling it Denali. It's not like Obama renamed the Mississippi River to Old Man River with an executive order.
