So I guess Apple made it clear. Buy a hackintosh.
It is time, and that's just what I did.
As someone mentioned, the Mini's specs (although quite outdated) are still more than sufficient for casual browsing, email, itunes, etc. But Apple's price is so far removed from reality that I don't know why anyone would buy one today.
My Hackintosh is a simple eMachines 3650 Walmart special that cost $299. It doesn't get much lower than this. But it performs much better than my Intel Mac did (which I gave to my mother to convert her).
The Hackintosh works well because it is very close internally to being a real mini (intel chipset, 950 graphics). It has a DVD burner which should of be standard on all computers in 2006, let alone 2008 (or 2009). It uses a standard SATA 160 gig HDD which is simple to upgrade or replace as is the RAM. And hey, it even comes with a keyboard, mouse, and speakers.
All this for hundreds less than the stripped down and hardly expandable mini....
For serious work, I still turn to my MacBook or iMac, but for sagging off in the evening and surfing the web, the Hackintosh is my main machine (even with the Acer 24" monitor, another gig of RAM, and the addition of a 500 Gig HDD, it is still cheaper than what Apple is asking for a mini)....
Come on Apple. All computers under $500 are not "junk". And the fact that you "don't know how to make them" says more about Apple than the rest of the industry....
