They are never clear as to whether that is the exclusive list of features or not - at least initially.

If it is only those two fixes it certainly won't be an update that needs widespread installs.
This

Why does my X need it if it doesn’t even list a fix for it.

I'm in no hurry to do any IOS updates. In fact I prefer not to do any. I'm tired of Apple sneaking in things like the battery throttling and not being clear on what is all included in these updates (like my screen dimming on all my devices after the IOS 11 update). They mostly mess up my iTunes, carplay and device functions. If my iPhone and iPad are working fine with the installed operating system I'll leave well enough alone.

Your mileage may vary

Not a cool thing at all. Means my number is tied up on a phone I don't have anymore. No thanks. Also any 2-step crap I have (from companies that still use it), goes to that phone. Yay for security! Means I am screwed. No, no and NO!
What are you going on about, have you you ever done a reset with a physical SIM? It does exactly the same thing. Two step if it’s a text isn’t connected to any device unless you trust your device which turns it off for that app only. The OP that you responded to hasn’t a clue either.

Here's a potential cool thing - your telephone number is embedded in the iPhone. In the event that someone steals it or you lose it, even if they wipe it out and try to reactivate it, it will automatically reactivate the internal SIM and possibly ping its location.

That is false, and has been covered on the eSIM thread: the iPhone is not locatable. https://forums.macrumors.com/threads/esim-dual-sim-q-a.2150226/
In addition to that, the eSIM will be erasable if Activation Lock can be bypassed/is not enabled.

Has this update been thoroughly beta tested or is the public "beta testing" this one as an official release?

How many betas did we have of 12.1.1 before public release?

Pretty much as is usually the case, there are more changes although probably of a more technical nature in one way or anther or something along those lines which they don't usually call out. (That isn't to say that I wouldn't prefer for everything to be listed out somewhere, but unfortunately that's typically not how it's done, even beyond iOS and Apple).

Did they fix that fact that 12.1.1 broke my iPhone 8 Plus's bluetooth connection for music playback with my 2019 Toyota Corolla? Guess I will find out soon......

This doesn’t effect me so I’ll likely skip, unless there are overall security updates which doesn’t appear to be the case, but here’s to hoping iOS 12.2 brings Hatpic Touch to all native Apple apps  One can only hope.

I've been having issues where my Apple Watch does not get email notifications but gets notifications for everything else. I have to reboot my iPhone and watch to get it working again.
You're not the only one. Mine does this all the time. XS Max and Series 2.

iphone 7 plus is getting very hot with this update.
Did you not see the line in the patch notes?

>Increased thermal throttle threshold on iPhone 7 Plus

Give me a break.

I'm tired of Apple sneaking in things like the battery throttling

Says the person who has no idea what the "Battery throttling" or "Performance throttling" update did.

For one, they didn't "sneak it in", it's literally listed in the patch notes. And for two, it's not "battery throttling", it is detecting if your battery has enough maximum capacity left to provide enough power/amperes for whatever you are trying to invoke.

Would you rather your phone suffer an immediate "protective" shutdown, or continue to operate and potentially permanently damage the internal components such as the CPU?

I have an 6s Plus why is it showing this software update since I don’t have a newer iPhone?

I'm not seeing the benefit of using an eSIM unless using 2 lines. Am I missing anything?

I would say for security reasons. If a thief steels an iPhone the first thing he will do is to remove the SIM card and so the phone will be disconnected and all the tracking functions would stop. Now with esim this can not happen and in the case of a stolen iPhone you can still track your phone. I really recommend everyone to enable the esim functionality.

If only Apple had an option to require passcode when powering off the phone this would work great. But a thief could just turn off the phone immediately. That said, I do plan to eventually switch to eSIM for the reason you mentioned, I'm just waiting for all of the bugs to be fixed before I jump over to that.

Just completed the update and my FlexiroamX SIM has stopped working. It is switching between No SIM/SOS/No Service.

4 days and I’m off overseas and need this roaming SIM to work. So, not a good day to update for me.

One thing I noticed, since applying the update 3 days ago. All of my photos on my iPhone 6S+ were uploaded to a "recently deleted" folder on iCloud, and deleted from my phone. I went to iCloud.com and finally recovered the "recently deleted" photos (600+ of them). I was unable to group select them from my PC browser - only could be restored one at a time, taking around 10 seconds per photo. I connected to iCloud using my iPad and was able to hit "Select" and then check off (one at a time) all the photos I wanted to restore - not a great solution compared to a "group select" option, but an order of magnitude better than the single select, click restore, repeat method I was offered on the Chrome browser on my PC. This is broken. I used to be able to select a photo, press the shift key, then select the final photo in a sequence to "group select". This feature is now in place with the latest iOS update. F.y.i. Not making this up. Googling the problem over the internet indicates I'm not alone. BTW, if that happens to you, you get roughly 30 days to "recover" your deleted photos before they are permanently erased. Cheers ...

After moving my T-Mobile SIM to eSIM and testing out an AT&T SIM, I've been having some weird behaviors, like some messages being sent out as text instead of iMessage, and trying to do iMessage from the Notification Center results in "Cannot Send Message: iMessage needs to be enabled to send this message."

I've already turned iMessage off and back on, and even turned off the AT&T SIM, but it still does the latter. Sending iMessage within the app itself is fine, however.

Let's hope iOS 12.1.2 fixes this.

Yep, I’ve been having this issue as well and I haven’t switched my carrier at all. Created a separate post but nobody responded to that yet.

The last iOS update also broke my iTunes Pass in Wallet. It stopped updating. When I went to delete and re-add the iTunes Pass, it refused to allow me to re-add it. I would tap the "add to wallet" line in all three places it is an option but it would just grey out for a few seconds then return without adding.
Has this behaviour been fixed with this update? I had to this very problem an apple support call last week, went to 2nd level, with screen sharing, disabling, an re-enabling iCloud (thus loosing my credit card info for Apple pay in wallet), and finally escalating the problem to the "engineers", how my supporter called it.

Update 3 hours later: Checked just now, misbehaviour persists in iOS 12.1.2.

People’s conplaints here make literally no sense. If your phone gets stolen, your physical SIM card would go with it as well.

Additionally, you do realise no one is forcing you to use an eSIM right? Keep your beloved, soon-to-be-archaic plastic SIM card and the rest of us will see you in a few years time!

Says the person who thinks they know everything. You don't have to be snarky. Okay.

This goes back to users not knowing and Apple offering the $29 battery replacement. 95% of users don't know anything about what Apple did with the throttling and saw their phone slow down and not knowing why. Then they go to Apple and get a new phone.

Yes I would rather have my phone just shut down and i would get a new battery and that would be that.

Happy Holidays!
