After having read about cases where the Catalina ROM (?) update completely bricked iMacs from 2013 and others (with Apple telling the owners that this is not covered by them), I'm even not sure about THAT anymore ...

yes the last update bricked my 2017 mac book pro so i guess i'm safe from this one as i can't install it

"Less than a minute remaining" turned into "About 2 minutes remaining."

Been that way for about 10 minutes now...

I find it comical that Apple takes the time to point out that "over 70" new emoji's have been added to the release (and even give said update its own section in the announcement!).

It really gives you a sense of where Apple's priorities are these days... is there an emoji for that?
You do realize that Apple is simply complying with the unicode emoji standard…

This! Its the most annoying thing ever. I reported it to Apple a week ago, but who knows.
I've been using the app "Boom" in the mean time. It's a nice app but is not perfect and every once and a while it will drop out for a second or two. Using it for Apple Music as well as Spotify. Hoping for the best.

So your theory is that Apple is pulling software and hardware engineers off other projects to draw Emoji?

ya, makes PERFECT sense.
