Well, I am one of those that actually loves Yosemite, and it's fast, snappy, quick, and responsive on my end, I have no problem with lags or slowdowns in Yosemite. Run into tons of problems with El Capitan - even icons don't show up right, compatibility problems, amd some of my apps (Adobe Dreamweaver) do not even work! So, I am pretty much happy where I am at with Yosemite and would be fine to stay here, because the new OS doesn't do that much for me, to be honest...

It's still beta. The speed improvements alone should make it a great upgrade. It's Yosemite on steroids. Sticking to Yosemite would make very little sense.

it is a beta and so bugs like the ones u mention are normal and are getting fixed with each released u cant compera an os
thats been in a stable state after 1 year plus of patching it to a brand new in progress to become alpha relase

What happens with upgraded apps like Notes if I run the El Cap Beta on one machine and stick with Yosemite on the other?

If I create new rich text apps and add photos to a note in El Cap, how will that iCloud synced not show up on my Yosemite machine?

I'm guessing here, but i'm sure there would be an update for Yosemite that would allow you to use the new notes to be honest. I couldn't see them not letting you go back.

*Edit* To be honest, I stick to OneNote anyway. I like how it syncs to a PC I use at work.

Sorry, you do have lag and you either don't notice it or choose to ignore it. At least on the rMBP...

Anyone else seeing this weirdness?

I think there's a new animation when pressing spacebar to preview where the window comes in with inertia
