So I followed these instructions from an Apple Discussions post and got things working again:

Set Watch Mail Notifications as "Mirror iPhone"
On iPhone set Alerts for each account as "Lock Screen"
On Sounds & Haptics go into "New Mail" and make sure "Vibration" is not set as "None (Default). Pick one.

For the vibration, I just created a custom vibration consisting of a very short single tap and turned that on.

Can't test just at the moment because I'm setting up a new iPhone, but if that's the only way to get it to work I'm not happy. I don't want lock screen notifications for any emails other than those from VIPs and I definitely don't want any form of vibration :(

Still doesn't work for me using these settings.

I'm curious though, can you try setting "New Mail" and Mail.app notifications to a different tone and see which sound the phone actually makes? I'm not sure why there are seemingly redundant notifications for Mail but my iPhone only uses the Mail.app notification settings.

But either way, I have them both set to vibrate and still no haptics on my watch for Mail.app.

Tested it now on new freshly set up iPhone and watch. It is, unfortunately, as you say. You need Lock Screen for alerts and a vibration set.

Not particularly happy about it but at least watch mail notifications and haptic are back.
 
So further monitoring of the "fix" shows that the actual notification on the watch disappears a few seconds after I receive the haptic. So, not totally fixed unfortunately.

I'm finding that it appears to only keep the last mail notification received - all the previous ones disappear.

Do we know if this has been improved in 5.1 beta?

No idea why, but this did work for me...

Just realised what's happening here - it's grouping the notifications. If you scroll to the bottom of the notification it says something like "+3 more", which you can tap and it will display all the previous ones.
 
Does anybody know if yesterday's update (5.0.1) fixes this problem? I know it's not specifically mentioned in the release notes, but maybe Apple wants to quietly fix it without actually admitting there was a problem.

I thought it was fixed, but now not so sure. Its still happening to me intermittently
 
My issue was fixed after I setup both my iPhone and AW as new so can't confirm if 5.0.1 would have fixed it for me.
I think that's too drastic a step for me that I'm not ready to take quite yet. Glad you got it worked out though. Hoping others may chime in. Thanks.
 
When I got my AW4, I decided to set it up as new instead of restoring from my AW3 backup.

I don't have any issues with email notifications (I get haptic and sound). I also don't have any issues with the Date and Weather updating on the Infograph watch face.
 
I guess setting the watch up as new would be less painful than watch and phone, but still some minimal effort required. I'll consider doing that this weekend or maybe just wait....perhaps a full point update (ie, 5.1) will be released with a fix.

I got a new XS Max last week and set up both the iPhone and my watch as new. It still had the same issues with mail notifications.
Haven't tried with 5.0.1 but will give it a go...

Nope - still not working like it did in watch OS 4.

If I set the mail notification to custom in the watch app, no alerts at all come through on the watch. They do sound on the iPhone, though, even if it's locked (which is very odd).

If I set the mail notification to mirror my iPhone, then watch alerts work, but you need to select lock screen notifications and a vibration must also be set. If vibration is set to none, then you only get the sound on the watch but no haptic.

Yeah, I was also experiencing an issue with my iPhone X not wirelessly charging sometimes that would fix itself after a reboot but kept happening. This seems to have meant it was a software issue so I setup as new but didn't fix my charging issue but did fix the Mail notifications for me.
 
FYI - I bought an AW4 today, and configured and updated it. Thus far, no issues with the email notification (built in app)...

BTW am trying a parallel set up with iMessages as they didn't seem to be working for me...
