After seeing that color I am now even happier I didn't order the Rose Gold edition. I get to keep my man card. Phew!

Got my Rose Gold iPhone 6S+ dock and it's definitely pink

Looks fairly pink to me. I still don't see that it matters - those that want to stand out, fancy a different colour, show that they have an 'S', or just like the colour, will still be happy. I'm just a techy guy and prefer a more industrial look to my gadgets 
What's the story with these docks? Are they the same as the last lightning ones, but with the metal finishes? How stable are they and how easy to line up the phone onto the dock so that you don't nick that shiny ring around the port?

Bad news dude. If you're worried about the color of a phone taking your man card, you don't have one to begin with.
Absolutely correct. It doesn't look copper in that picture. Too many people are thrown off by the incorrect white balance of the various photos that make Apple's rose gold aluminum look copper. For example, the photo below is that of a rose gold aluminum AW with lavender sport band, but the band looks white and the watch case shows a nice copper color that male members were hoping for. The clearest indication that the white balance is off in that photo is we know lavender isn't supposed to look white.

If any of you saw Tim on the tonight show last night, you would have noticed the rose gold iPhone that Colbert was showing off. It's definitely way more pink than gold.

Comparison with old Motorola pink Mini RAZR (called something else, can't think of it) and iPhone 6+ in gold. Taken with iPad air 2 camera.
It is more of a salmon color than a straight out pink. Just my opinion though.

If you mean inside the display table at Apple Store, keep in mind that the strong fluorescent light can throw off the color. In fact, the Space Black AW looks gunmetal inside the display table when it's in fact black. Nevertheless, it should look more pink and less copper relative to real rose gold on the Edition models inside the table.
I have been waiting for a copper (or in that sense bronze) iPhone since the first 5S Gold came out. No dice. Steampunk fans would love to get their hands on these.

I could see that. But because of the frosty aluminum finish it often appears as a soft pink, almost lavender in some light.
And now I'm totally getting a dark blue skin for my space gray phone and telling everyone it's the gold one.

The white balance is off in that one though, hence why it looks more copper than your OP.
