Should I restore my iPhone to a backup or should I do a clean install? It's about halfway done now and I'm not too bothered if I have to start again with a fresh install. Just want to do the safest/easiest method.

As in for GMs (like final public releases), they are still used for betas.Apple no longer use UDIDs for anything, you were scammed.

Why? You can't really install anything that doesn't come from Apple or is for the device that you have as Apple won't allow for it to go through.I'm not installing until I get my MD5

Yup, basically that.That's the wrong file (6,1). The one I've got (6,2) A1457 has md5

In any case itunes won't install a fake file. Apple verifies it on install.
