If I jailbroke my iPhone 3G 2.2.1. do I have to restore it before upgrading to the 3.0 software? I won't re-jailbreak in the future.

Restoring is an inherent part in the update process, so in a sense, the answer is yes.
 
Side note: I upgraded to 3.0 last night that I got from a mirror. I initially had trouble because iTunes was out of date. After I updated that, the upgrade went smooth and haven't had any problems with applications or whatever.
 
How long do people think this will take to do? Yes, I know the ability to download might be affected if servers crash. But, in general if things go relatively smoothly how long will my iPod Touch be out of commission? Will there be a need to re-sync?
