I ordered mine on a Friday. I got tracking on that Sunday evening around 7PM. It wasn't in UPS's system until about 8AM Monday morning as "Processed. Ready for shipment". It stayed there until about 11:45 Monday night when tracking went live and it started showing progress and a delivery date.
If you ordered it before 4PM ET Monday-Friday, it should ship that evening, which means you should start getting tracking information updated quickly by midnight since it's next day delivery. If it ships friday, you won't get it till Monday so transit may not start till like Saturday evening or Sunday so may be a long delay from when details start showing. I think I had just long periods of silence because They got it ready for shipment Sunday night but didn't get picked up until Monday morning. And then it didn't actually start it's transit until Late Monday night to be delivered for Tuesday morning.

Apple store inventory and Carrier inventory are totally different. Apple has a separate stock they send to their Apple stores, Best Buy, other retailers, and Carrier's have their own stock that Apple sends them. Apple stores may have a device in stock on a regular basis in their Apple stores, but Sprint, doesn't have the same amount of stock, or Sprint's stock is sold/sent out for pre-orders as soon as they get it. It just depends on the retailers demand of their own inventory.

I ordered on 9/10 JB 7+ and had an estimated delivery of 11/11-11/18. This past weekend, Sprint has an abundance of JB 7+ in the 256GB variant available to ship immediately, so I canceled my 128GB on Friday and ordered the 256GB and had it delivered yesterday. But all the 256 7+ models that were available to ship immediately all sold out as of yesterday and are backordered again.
