I completely agree with you. Every single iPhone 3-4-5-6 was a lemon for us. The S's were great.

Easy Answer: Premium product differentiation
Apple's Answer: Unecessary overkill and keeps costs down.
Sounds great for the special use case.
Nothing really "sells out", the delivery dates just get pushed back.
Of course there will be some demand. It remains to be seen just how much. You'd think that since they're marketing this as a "current" phone at a cheaper price point (as opposed to last year's model at a cheaper price point) that they'll sell more than the 30 million they sold last year of 4" phones.

Or, y'know, it's a product that people asked Apple to make so they made it... People who wanted a 4" phone have repeatedly stated on this forum and others that the 5S is great, all it needs is the 6S internals and they'd have a sale. That's exactly what they have produced.
I'm not sure how this is a "scrap heap" design - I mean, what specifically makes it that? It has the internals of a 6S, so it's not that, which means it must be because the external chassis looks like a 5S, so I have to ask, what makes it "scrap heap" to stick with a design that clearly works instead of just making it look like the 6S (presumably, since you don't think the current phones are "scrap heap designs") just for the sake of it?

If Steve Jobs was still alive, we would have moved on to another form factor by now. Rehashing the same thing year after year is going to put Apple out of business. Just because people want something doesn't mean it's good for them. Steve Job knew this and knew what you wanted before you even wanted it.

I use two Office Apps at the Same Time with Many Safari tabs open when I use it for work.First people were complaining about 1GB, then Apple finally updates the entire line to 2GB and people still bitch about that.
What Application on iOS requires more than 2GB? I can't even run out of RAM on purpose with my Air 2. Is this disappointment purely just because the 12.9" has more RAM? I was shocked and baffled why the 12.9" even had 4GB of RAM, to be quite frank.

Yes. Some people want a 4" phone, which they always had available in the 5s.
The 5SE came about after sales of the 6 stalled.
Apple was left with 6 internals and falling sales.
Solution: drop the 6 internals where possible (not 3D touch) in the 5s body shell and have a fire sale to clear old stock. Also helps to push Apple Pay.
If the SE had been a proper 4" design, it would have been revamped to fit in with the language and form factor of the 6, and it would have been a proper part of the 6 family.
This fudged 5 body with fudged 6 internals and a fudged name that harks back to a three-year-old design is a Frankenstein in every possible sense, not a genuine attempt to build a new phone for the 4" market.
Sure, lots of people will be happy with the 5SE. It's a great phone, especially if it was still 2013/2014.
If the 6 series was doing well, the 5SE wouldn't have seen light of day. It's a panic response by Apple.
It's not a phone fit for 2016. IMO, of course.

I ordered a SE 64gb for my wife on a 2 year plan. I'm very anxious to see the beast.
On demand, I suspect Apple is going to have a hard time guessing demand for this phone. They might have decided to be conservative in their pre-launch production levels and stockpiles. Without knowing those decisions we can't tell if delayed shipping dates are due to "high" demand or due to cautious advance ordering by Apple.
