Ultra makes sense for following reasons

Ultra premium pricing
Premium design with high level tech
Premium multitasking
Premium productivity

(yes, there are users that want an foldable iPhone, even though if many here think it should not exist - might not be a mass market product due to price, but I think there are plenty of people wanting it)

i do, just not at nearly 3k and less cameras
 
Not a chance that anyone knows apples true marketing name for the product, which is likely one of the only things that can change up until the last minute, and certainly isn’t going to be gathered from Chinese supply chain sources given that it’s all from their American marketing team.

However, my personal opinion is that it will be neither, and much like MacBook Neo will be a name that no one is quite expecting, at least widely.
“iPhone Duo” perhaps, considering their last folding accessory was called the “MagSafe Duo” and it fits way more than “Ultra”. “Ultra” implies the best specifications, which this phone obviously will not have.
I would even dare to propose it will not be called an iPhone altogether… Apple also likes to “create” new devices by giving them names (retina display as an example).

It is not an iPhone and not a iPad, so they could very well just name it iFold and then have Air and Pro and Ultra version of it…

Depends on your definition of last minute - they need to spend months before introduction building up an initial stock of devices and every one of those phones needs to go into a box with a name printed on it.
 
From what I understand from Apple marketing, they don’t finalize names until last minute for production and then they certainly wouldn’t tell anyone outside of marketing once they did. There are stories of people working on products not knowing the name until it was announced publicly.
 
The Ultra Moniker would definitely be a better fit than Fold. I really wish Apple would drop the numbering of iPhones and unify all of their products under the product suffixes and just go by model year.
  • Neo (replace e series iPhone and standard iPad)
  • Air (drop standard iPhone and introduce cheaper Air, shift to Plus branding for larger screens)
  • Pro models (drop screen sizes on MacBooks and shift to Max branding for larger screens)
  • Ultra models (iPhone Ultra foldable, MacBook Ultra, and AirPods Ultra)
 
They will call it the iPhone Book. It makes perfect sense. It's like a book, and like MacBook, iBook, PowerBook.
