Man, I don't even know what's going on anymore. I've purchased plenty direct from Apple online and never have had a transaction go this way. Supply chain/pandemic/shipping backlog can seriously suck it.

Paid with PayPal (had soem cash in the account + linked to one of my bank account's debit card)
PayPal showed payment in "pre-authorization" morning of Nov 22; my bank showed payment as a pending transaction from this time
Nov 23, order went into "preparing to ship"
~2:00AM local time Nov 25, shipping notice email from Apple....UPS tracking #, as expected, was of no use
Nov 26, I think, PayPal payment went to "payment" (as opposed to "pre-auth")...the cash I had in my PayPal account was applied, so PayPal balance shows as $0.00, as it should.
If you still have a tracking number from UPS, then you're okay. I wouldn't worry about that yet, unless UPS pulls the tracking number. At the very least, you can call UPS and verify that the tracking number you have received is a valid tracking number. If it is, then you're good to go.
One thing people have to realize is that just because they get a tracking number does not necessarily mean that the item has shipped and is en route. Here's a good example.
Consider the "Shanghai purgatory" people have been talking about here, where they get departing and arriving scans all in Shanghai. What is happening is that at the UPS distribution center there, all of the pallets containing the Macs to be shipped have to be tracked. They'll get a departing scan from there (Leaving the facility), to get to the airport. When they get to the airport, they get scanned again (Arrived at facility). There, all of the pallets "compete" (lack of a better word) for that sought after space on an airplane.
Those that get on a flight get the even more sought after Departure Scan, indicating that they are on a flight. Those that do not get on a flight just don't stay at the airport; they have to be tracked per chain of custody. So those that miss a flight get sent back to the Distribution center, getting the "Leaving the facility" and "arriving at facility" scans, all being in the same city. They try their luck again the following day for the next set of flights.
All of this happens with a customer's tracking number, despite the fact that there was no movement of their Mac outside of the same city it has been in the entire time. But as long as there is a tracking number for your Mac,

But what's interesting, my bank no longer has my payment to Apple as even a pending transaction.... It's as if no payment was ever made. It had been showing as a pending transaction in my bank account since Nov 22, but now it's not even showing. Weird.
Did the funds get refunded back to your Paypal account? And your bank account should have an ID for the transaction that shows that the Apple payment was pending. This is important because this is the paper trail for the payment. What you're saying is that it sounds like the authorization was made, but not only was the capture of the funds made, but the authorization for it is now gone as well. If that was the case, you should get hold of Apple to see if the order for your Mac is still valid, because the request for the payment (the authorization) was made, and now isn't there.
Also, if the preauth was there, and the pending transaction was there, it should show you what the pending balance would have been after that transaction. Did your balance go back up, or did it stay where it was at after the pending transaction? If it stayed, then the payment went through; if it went up, then the transaction didn't go through, meaning, you hadn't paid for the Mac.
I ask the banking questions, because I've worked both at a bank as a systems administrator, as well as a company that processed credit card transactions and other PCI data and stored that data for fraud analysis, so I am very well familiar with how the funds are processed in a credit card transaction.
