Ya' know, unless there are real constraints (component shortages, incomplete software, product quality, etc.), Apple should release both the iPhone and a next-gen, top-of-the-line multi-touch iPod as soon as practical (possibly, even today!).
Marketing 101 suggests that you can manipulate demand and competition with features and pricing.
Who says Apple can't price this new iPod the same as (or more than) the iPhone?
Or include features in the new iPod that complement/enhance the AppleTV experience.
Or, maybe, two models of iPod with the iPhone priced in the middle.
In this way, the new iPods both compete with,
and create demand for the iPhone (and AppleTV).
This would put Apple in the enviable position:
"If we're going to have strong competition (for these products), it may as well be from ourselves!"
I say, release 'em ASAP and never look back!

Is the iPod really an alternative to the iPhone? If someone wants a phone, iPod is obviously not an alternative. and if someone wants an hi-capacity mediaplayer, iPhone is not an alternative. And what about those people in Europe who wont be seeing the iPhone in 6 months? What about those people who already have a phone and who basically have no way to switch phones (or carriers)?
If Apple decides to hold back the iPod so it wouldn't "steal iPhones thunder", they would be screwing over a huge number of people. No, it would make sense to release a iPhone-derived iPod as soon as possible. And even IF it would cut some of the sales of the iPhone, it would still mean that people were buying an Apple-product, instead of competing product.
My guess? I would say that we will see a new iPod at the same time ITMS start selling DRM-free tracks. At that point Apple really needs to compete with their players, since the ITMS tie-in is reduced.
