The certain iMac G3s had VGA ports on them. I can't seem to confirm that they would accept input though. I've heard mentions of it though.

AFAIK, no iMacs have had the capability to be used as an external monitor with a cable connection.
If Apple allowed their iMacs to be used as external monitors that would indeed be quite a surprise.

For back up storage, I don't see it either.
External HDs are very cheap as you mention. But to me, convenience is another issue. If I have 500GB to back up, I can connect an external HD via FW800 and clone it using Carbon Copy Cloner or SuperDuper in a few hours of non-attended use.
With BluRay, I would have to set up each disc, then wait for the burn and verification. HD back up is so much more convenient and faster.
As for watching movies, with Internet bandwidth improvements and the convenience of on line purchase and rentals, I think we are seeing a movement away from physical media and this trend will only continue as things keep improving.
On a personal note, I'm renting more and more. Given a typical $10 movie that rents for $3, you can rent three times and still come out ahead.
PCI like a PC? Don't see it.
PCI slot card slot on the Motherboard? Don't see it as the industry is moving to PCI Express slots.
Express Card slot? Don't see it either.
SD card slot. Possible. Already the MBP13 & 15 have a SD card slot.
Built-in digital TV tuner, DVR and 5-channel
Apple has toyed with built-in TV tuners in the past. The TAM and some other models had them.
I don't see Apple including this option because for those limited few that want it can just purchase a USB TV tuner.
There are a few TV tuners that are available and for a reasonable price. Additionally, TV around the world is to different standards so it is best to purchase a USB tuner that works in your areas video standard and frequencies.
