From what I've read. Your phones operate on 2.4ghz that is the max they can go. There would be no point in it being on the 5ghz since it can't use the whole amount so I think it's more about optimizing witch devices can take advantage of each band.
You have to call T-Mobile. It's not on the site and they're 25 bucks now
I'm honestly not 100% sure but I think so. Or the 5GHz may have better range.

That's what I'm probably gonna do. Put my PS4, laptop, apple tv, and iPad on the 5ghz and the phones on the other

Pretty much, I would check to see what each device runs on 2.4 or the 5 and separate accordingly. That way you get max speed and usage out of each band.

There's NO NEED to put different devices onto different spectrums. The different spectrums (2.4ghz, 5ghz) are more about reliability (someone mentioned that 5ghz actually has LESS range and he's CORRECT - just LESS interference because many devices use the 2.4 ghz spectrum).
Give both the 5ghz and 2.4thz the same SSID and password - let your devices automatically connect to the spectrum that has the fastest speed. This will give you the most seamless experience.
