They probably sent this email due to the endless inbound queries from people here to their support lines asking about when their watch will arrive.
If I was a company and all my customers were calling me asking this, despite having given them a delivery window, it sounds perfectly logical to conclude "clearly that window has not been made clear enough as everyone is still asking when their each will arrive". Sending a reminder email would make sense.
even if that's true, it backfired SPECTACULARLY, and why wouldn't it? You'd think apple would realize that early adopters and apple fanatics will always be the way we are. It's inevitable. I'm sure more rational people 3 months out would read it correctly if that was the true meaning.

Yes, there are bigger problems in the world, and we all know that. We are also eager to get our watches. Both things can exist simultaneously.
I can guarantee they really just sent this out to all the people who are in "processing" right now, but with the shipping date specified in the email. I am sure that it wasn't sent to people because they won't be getting it on Friday, simply to encourage people to be patient, and there is a chance they won't get it Friday, just like the original shipping estimate said when they ordered.
