I've made a couple of custom shortcuts, but I'm not going to make a shortcut for every command in every program. And I'd rather have a direct keyboard method. If they don't exist in word (it truly does depend on the app), you can make and/or tweak your shortcuts in systemprefs>keyboard & mouse>Shortcuts.
This is for editing cells that already have values. If you start typing, it types over the existing text. Unless I've missed in Numbers, you must double-click to edit. In Excel you can press F2 to edit. This is handy since spreadsheets are sometimes more easily edited and navigated by Keyboard alone. And part of it is that Numbers is still new and lacks some of the features and maturity of Excel. What do you mean? I simple select the cell, and I can write in it (just tried, but again, I don't really use that app either, other than to open already made docs.)
These issues don't prevent me using a Mac, and I keep finding alternatives -- like Alt-Alpha for symbols, that I was unaware of. But there's a few more gaps in keyboard navigation that I haven't found the OS X replacement for yet.
