I think the deal is they are literally selling every single space gray they make. Immediately. Between shipping, preorders, and walk ins. They push stock to whichever method is most in demand.
I remember reading a story a few years ago about their extraordinary supply management system (all part of Tim Cooks brilliance). There's some NASA like room somewhere with huge video screens that shows all iPhone stock in real time. They can immediately spot geographic shortages and redirect stock to various stores and partners as needed.
With that in mind, it shows you how spread thin they are with the most popular models. On top of this the 6 Plus is more difficult to make with the new screen tech etc. Recently, stories out of Asia reported something like 50% of the displays were not making qc and were thrown out. I'm sure this has improved somewhat by now.
It's all part of being an early adopter. New production processes - and with objects with this level of craft they're quite complex - need time to work out the kinks.
