Got the first one restoring by encrypted mac backup. Powered up, walked through basic step of country, face id, etc. The skipped quick start and went to the mac backup and off it went. It did NOT ask about moving sim to esim, guess that comes later? Our upgrades are from Old devices with physical sim so maybe this process is a bit different and you do that at the end. Guess I'll see in a few minutes.
Okay, so took 6 minutes to restore from encrypted backup. Immediately afterwards it asked if I wanted to move my watch which I said yes to and that took 10 seconds, then it asked about moving the old sim to the new phone. Said yes, the old phone asked for verification, said yes, and it transferred within 30 seconds. Old phone no service, new phone service.

You need to follow your Carrier's instructions to move from a physical SIM to an eSIM. The Apple eSIM instructions don't work for all Carriers.

I'm so irritated! I don't know what to do. I left my house, and they attempted to deliver my package. Apparently it needs a signature. I haven't needed it in the past, and it said that NO WHERE on my shipment details. I thought they would have just left it. I would have not gone knowing I had to sign for it. I have no idea where I would even pick it up, but it seems the UPS customer centers are closed on weekends, so I have to wait until Monday - which won't work either because I work in-office. So irritated.
 
I chased the truck too lol. Guy was real nice and said new iPhone huh! Showed him ID and he let me sign for them no problem. Asked about delivery signatures and he said they are all requiring delivery signatures no exceptions in Atlanta. He also mentioned they were doing reattempts tomorrow (Saturday)
I’m about 30 mins from Atlanta they left mine at the door no signature required for me

How large was your backup and which cable did you use from the Mac?
 
Small question. I ordered IP 16s for my wife and I on the 13th from Apple's site. I attached the phones to Verizon and, because of that, it would not allow me to order two phones on the same order (don't get that). So I order hers first, and it gave me a delivery date of the 20th. I immediately order mine separately and it gave me a delivery date of the 25th. The only difference between the phones is color and memory (128 for her and 256 for me).

Why a 5 day difference? Is it the memory so it comes from a different source?
 
How large was your backup and which cable did you use from the Mac?
18GB and used the old white apple cord I had (usb) and used a new apple lightning to usb-c adapter to plug in the new phone to that cord.
 
Ok got it, my backup would be significantly larger lol (180gb)
My pics are online and music is by music match so much smaller. I'd probably be close to you in size if I stored all that on device and yeah, it would take a LONG time

Just as many of you mentioned, UPS definitely wanted a signature from an adult from household and would not just leave by front door as specified on MyChoice. Luckily wife was able to get to door and sign for phones!

It was nice of driver to deliver them early, truck generally makes a 2nd trip to deliver to us much later in evening!
