One reason is just the fact that the software is specifically made for the hardware. Same goes for iOS. And this isn't just an apple thing. The reason why consoles last years isn't because they run amazing hardware but because all the games made for them are built with just that one piece of hardware in mind. You can find tune and take 100% advantage of it where as if you are building something to just generically run on anything it will never have the same level of polish. Same goes for android. You can see that the nexus android phones run much better than just any other android device because they were made side by side with the software.

When the Retina MacBook came out they were laggy like crazy.So will it be dropping frames and all that jazz? But won't the new Apple Display be designed to work flawlessly with at least the computers of the same year it came out with? That's ridiculous...

I've ordered expensive laptops from Dell and Lenovo before and they've shipped without issue...but if a local Apple store has the config you want, why wouldn't you get store pickup? It's available to be picked up that day and you don't have to wait for shipping.
