It's encouraging to see a reasonably price school lunch program with a decently balanced menu (even if the potatoes are mostly simple carbs, at least they're not fried).

That's definitely true. As for the simple carbs, the way our school is laid out and the way the schedule is run, we end up doing a whole lot of running. They don't get the chance to stick.
With the whole cafeteria thing, I actually like eating healthier meals because the food doesn't just settle in your stomach like a cheesy/fatty/sugary/caffinated brick.
As far as your dinner goes... it looks as though you have top-notch eating habits. How'd you develop them? Some of us only eat a 3-ounce cod fillet, vegetable medley, a spinach-pepper-and-cucumber salad, applesauce, and water.
