For modern Wing Chun films, especially one circling around Ip Man, I defer to Wong Kar Wai's
The Grandmaster. Donnie Yen is a wonderful fighter, but I politely cannot say the same about his acting.
I, um, get more of a buzz watching
Ti Lung practicing wing chun on a tree than I do the Yen Ip Man movies.
My favorite kung fu movies on the Wing Chun style are
Warriors Two (1978) - which really needs a blu ray release badly,
The Prodigal Son (1981) and
Wing Chun (1993, to wit Mr. Yen gives Michelle Yeoh's nun enough reason to develop this awesome fight style).

Lately, back to some of my favorite Shaws.
Vengeance! (1970) - the more I watch, the more I love this. Simple story well acted and choreographed, almost every shot is beautiful despite buckets of red paint standing in for blood. You really cannot beat David Chiang opening up copious amounts of whup a$$ on organized gangs and such in retaliation for killing his older brother. *
*Okay, well you could if Chan Wai Man was doing the same thing.

Five Venoms (1978) - which is great fun. Just realized one of the elder Venoms house masters' primary styles is the Invincible Armor (Toad) style.
