I'm guessing you didn't read the terms and conditions of sale very closely.
Specifically this part:
Now once they've billed you there is the possibility that you might have a claim since at that point the transaction has been consummated (regardless of what their terms say.) However before that point you've agreed that right now you don't have anything from them other than acknowledgement that you want to buy something.

Then I'll sue them for order discrimination. Don't worry me and and a motivated lawyer will come up with something creative to teach Apple not to mess with the little guy. No, in-store was not an option on 4/10. Apple displayed it as an option but you could not click on it. That's what I wanted to do, I gave up on both iPhone Apple Store app and online at 02:08 cdt. I went ahead and purchased to ship to my house with confirmation at 02:10:39. I was set to purchase at 02:00 when the app loaded. Awesome lets go down that path. It order for there to be discrimination first we have to assume that the apple store is a public accommodation. For this fun little exercise let's go down that path and assume that is true (and it most likely is.) Next lets assume that you'll sue under Federal Law, to do that you have to show that Apple discriminated you on the basis of your being a part of a protected class. At a federal level the protected classes are Age, Sex, National Origin, Race, Religion, Color, Pregnancy, Citizenship, Disability, Familial Status, etc...
In order to prove discrimination on the basis of one of those classes you'll need some pretty hard evidence. Considering that I'm sure that members across the spectrum of all of those groups have been sold watches so there isn't a prima facie pattern of discrimination. So do you have emails or documented phone calls where someone told you that they weren't shipping your watch because of those reasons, and evidence that is true?
I'm pretty sure you are trolling, but if you aren't there isn't a lawyer in this country that would take your case and risk sanctions.

Your Apple Watch will be delivered between April 24th and May 8th. When your order ships, we'll send you an email with a specific delivery date and tracking information.
So my Legal Eagle, are you claiming that some lawyer would not be able to sue Apple for failing to deliver my order Apple during their promised time frame. I paid with ApplePay and Apple CS says that the card has been approved. They have been advertising that watch is available on 4/24. They have been shipping out watches on 4/24 and since. So if they fail to deliver my watch by 5/8 as they have committed to and without serving me due notice and proper cause as to why they could not satisfy my particular order, I definitely think I have a lawsuit with some merit on my hands.
But hopefully, Apple won't let it come to that.

Pre-Auth isn't a charge. The watch was available on 4/24 I'm wearing mine right now that I got on that day. The email doesn't modify the terms and conditions that you agreed to, so no.
