Stainless steel. Was hoping for a more drastic design change but I like the new edge to edge display. I’m coming from series 2 so I really need a new watch now.
 
That's my understanding too, unless you go with the Hermes which appears to have a space black at least for the Series 6. Graphite is basically the same coating process as space black but the darkness falls in between space black and plain silver. Many say it's better. I have to see one in person.
Graphite's DLC coating definitely isn't as strong as Space black - that or the black just hides scratches better?
 
Skipping the 7 and keeping my SBSS series 5 because of the DLC coating. It's the most durable finish next to ceramic. My series 5 still looks brand new. Hopefully, they bring back the SBSS or ceramic for series 8.

I would love to get more info on the graphite DLC scratch resistance. I've seen posts saying that it can be scratched, especially with the Milanese Loop. I'm not sure if we're talking micro-scratches or something worse.

I've owned exclusively SS Apple Watches that I wear with my Link Bracelet. I'm seriously considering going with a graphite Series 7 with the Milanese because I like the look and am ready for a lighter, better-fitting adjustable strap. I'm ok with hard-to-see scratches over time but would not go this route if scratching is a big problem.

I like it better, but it’s a matter of preference.
 
Going back to natural Ti...had Natural Ti for S5, then went SBTi for S6, now looking forward to Natural Ti again.

I’ve had my graphite for nearly a year now and it is absolutely mint despite being bashed about a bit. Not a mark on it. It holds up really well. But avoid the Milanese loop. It is a watch killer and if you’re not careful it will scratch your watch up like you would not believe
 
I'll be sticking with my S6 but if I were upgrading I'd stick with the natural titanium. I'm not a fan of dark watches and this is by far the nicest finish of the three I've owned (silver aluminium, stainless steel and now titanium).
 
I believe I read somewhere that the longer the DLC process, the darker the black gets and more durable the coating.

Call me a conspiracy theorist, but the switch from SBSS (a very beloved color by many) to Graphite was a cost saving measure by Apple and just being marketed as a cool new color. Also the reason why very premium Hermes still has it lol.
 
how has the Ti held up over the years over the SSSB?
Here is a nice scratch grouping on my S6 SBTi made from rock. I was digging a trench and as I was lifting a rock out of the trench, I rubbed this up against another rock implanted in the ground. The rub was hard and forceful. I was expecting a lot worse, FWIW. The sapphire held up nicely against it.

I’m most likely sticking with my normal silver stainless steel, though I’m a little tempted to go for the titanium this time. I’m slightly concerned by how easy it is to scratch the titanium though. It’s easier to polish the steel if I choose to do so.

Those who’ve had titanium, what say you?
 
I'm really surprised about the limited colour selection the Aluminium. Space Grey is the winner for me, I'm sad to see it gone.

I was unlikely to buy a S7 anyway but I REALLY hope SG returns for S8.

Same for me , I really wanted to change for a grey/black but I guess I'll give my aluminum S4 another year. Anyway it's still going fine with 89% battery health .
