I just called and was offered a smart case for my "trouble".
I'm not complaining.
And when I log back online to check my status, my shipping has been upgraded to next day and it now shows shipping date of "Nov 20 - Nov 27"

I canceled my online order after seeing that my local Apple store had a rMini in stock. So now my question is, how soon long does it take until it's ready for pickup? Less than an hour? I'm hoping I can grab it in time before the store closes in 3 hours.
As of right now my order has been 3 hours ago.
My store said they're getting a ton of online orders which is causing the delay; might have to wait till tomorrow AM

Yeah that sucks you can't cancel it once it goes to that stage. If you have the funds only other thing you can do is buy another one from the local stores.
My 128g VZW LTE is also 5-10 days out but they charged by debit card this morning and my status is still processing.
Just returned both iPad Airs and placed an order for two 128GB AT&T rMinis. 5-10 business days. Same since early this morning.
I checked all the Peninsula Apple stores and none had 64GB or 128GB Cellular models for in store pickup. Hillsdale had no display models or even WiFi for walk-in.

That's a good sign - I've only been charged for the smart cover which is prepared for shipping. Maybe they're going to start shipping...
Completely out of stock in Minneapolis/St. Paul. I didn't even realize the stores would have them thanks to dead macrumors so I ordered online this morning. Same as everyone, preparing to ship.

Same, none of the stores here in the cities have them, but they've made it to Chicago.
I also ordered at 7:30 AM this morning, but I'm hoping by 7:30 AM tomorrow morning there are some in stock at the stores and hoping Apple doesn't charge my card by then and I can cancel the order and pick up after work.
