Wouldn't be surprised if the iPhone's on display at apples stores won't allow you to actually hold th jet black because of th scratching. They may just put it in a display box and let you see them, but not actually touch. Just read the Engadget review - sucks to be a jet black owner to be honest, no doubt they will have the highest return rate and lowest resell value in the coming years.

Very quick unboxing video from CNET of the Jet Black iPhone 7 and Black 7 Plus. Noticed in the video it's just a cardboard "sleeve" of sorts for the EarPods and adapter, but guessing thats just because it's a review unit, or do we think that's how they will come shipped now?
Apparently they already do this in some places! So you could be right with them putting the jet into display casesThey'll let you hold the others, just not the jet black...instead they will just let you see the jet black. Merely an educated guess btw.

High end watches. Also not unheard of in other countries, someone posted a pic of how they are in some France stores where they have put iPhones in display boxes.

Definitely not for phones though. Never ever and I'll bet on that too in stores.
Yea like I said it's just an assumption. Think about it though, if the phones are getting so easily scratched like it's said in the reviews, do you really think Apple will keep them out for everyone to play with? Let's be honest, if they had th jet black out, th first thing you'd do is check the back for scratches lol. It will be in their best interest to keep it restricted to just display boxes.
