But how do you reinstall them, and how does this work with Siri. Does this mean we can now change default apps, and when we say to Siri "send email..", does it use a third party app? What about for viewing photos via Siri? This raises many questions![]()

I'm guessing that setting default apps will come in a later build, that deleting apps wasn't really discussed in keynote, but might in the dev sessions. Developers can now access Siri, so it could be possible for someone to say to Siri to play a song on Spotify or send an email via gmail, or call someone via Skype, if the developers take advantage of it, replacing Apple Music, Mail or FaceTime.

Because = Beta. It's in the notes it can be deleted in a later build. Just not in Beta 1.

Millions? You have facts to back that up?
Facts? No, no I don't - unfortunately there hasn't been an in depth study with formal findings published on how many average users keep the stocks app etc. in a separate folder. But going by the amount of iPhones users I've spoken to and seen complaining on here over the years, and how many of them talk about having a folder just like the picture above Mac Rumors used I'd say millions, yes.
Bare in mind if you want facts, actively contributing to discussions on a website called MacRumors which is built on the complete opposite of facts is probably not the site for you.
True this is a site for rumors from credited sources. But when you post your opinion as fact, that's different.
