The additional white sport band that I placed an order for at 8.05 on the 10th April has had the shipping date changed from May to the 27th May - 1st of June

If you're connected to your work's wifi, then you'll get limited functionality... Notifications and iMessage.

It uses wifi and Bluetooth to communicate to your watch so you'll get wifi range - bigger than Bluetooth.

So, you'll only get functionality if your iPhone is in Bluetooth range... Which is not far and affected by obstacles, walls etc.
Yes to your phone, you don't need to connect to their wifi. Panick over.

Not quite true.
Apple Watch uses Bluetooth® wireless technology to connect to its paired iPhone not wifi. It then uses the iPhones wireless connection (either cellular or wifi) to perform most of its functions.
If your Apple Watch and iPhone are on the same wifi network but aren’t connected by Bluetooth, you can also do the following on Apple Watch without iPhone:
• Send and receive messages using iMessage
• Send and receive Digital Touch messages
• Use Siri

I got the exact same email and also did the exact same thing of clicking the email with excitement, only to be let annoyed again!
If you can't connect to your work wifi, then you'll need to rely on your phone being close enough the watch to be connected over Bluetooth. If you have to keep your phone in a staff room or locker, then it's very unlikely you have a consistent Bluetooth connection to be able access the watch's functionality.
