I think there is a Catch-22 situation here

Apple haven't updated the Mac Mini so no one is buying it because it is out of date

Easily remedied. Apple has 40 years of historical data on how to fix this.

That unfortunately relies on Macs, for software. But sadly, Apple only give a damn about a couple Mac form factors.

Stopped in my new local Apple store and the mini was nowhere to be seen. There was a Mac Pro on one table with two monitors The second monitor was hooked up to a Macbook Pro.

Does anyone's local Apple store still have minis?
a few shop don't appear at desk, only focus on imac ,macbook,pro ..

Last time i buy last stock ...
 
It's always seemed to me that they would wait until they had the new Cinema Display sorted out - which is apparently being done for/alongside the new-new-MP. So those three products seem destined for a simultaneous unveiling (or at least teasing of one whilst fully unveiling the other). After all, they wouldn't have decided to get back into the display market purely to service the nnMP. It's too niche to build a new monitor purely for that market.

At one point I might even have expected them to use the chassis of the new Cinema Display as a TV too (i.e. the "iTV") as well, but given they just updated Apple TV without so much as hinting at it, that's probably unlikely now.

I don't dispute that may be the case right now, but only because the two desktop lines have fallen into utter disrepair. Surely if the Mini and Pro were actually still competitive in their respective markets they would outperform laptops for display usage, if only because they literally need one in order to work. By contrast, Macbooks simply use them as an optional accessory.
 
Still hold out hope for a refresh in October, but I'm doubtful it will happen at this point.
10 different iPhones have been released since the last Mac mini:
  1. iPhone 6 (2014–2016)
  2. iPhone 6 Plus (2014–2016)
  3. iPhone 6S (2015–present)
  4. iPhone 6S Plus (2015–present)
  5. iPhone SE (2016–present)
  6. iPhone 7 (2016–present)
  7. iPhone 7 Plus (2016–present)
  8. iPhone 8 (2017–present)
  9. iPhone 8 Plus (2017–present)
  10. iPhone X (2017–present)

I think the iPhone 6 and 6 Plus were introduced a month or so before the 2014 Mac mini was announced, so that would make it technically only 8 iPhones. But yeah, clearly Apple's main priority is the iPhone, and who can blame them?
There was no iPad Pro when the mini was last refreshed. No Apple Watch (announced but not available yet). No AirPods. No Touch Bar MacBook Pro. Nothing after OS X Yosemite which is now losing support soon.

I can go on about other things Apple has introduced during all the time that Mac mini has stayed the same.

I see it from a different angle. I'm using my iMac 27" as external monitor when I'm working from home. Since they don't support target display mode any more I'm missing a large monitor for my MBP. And buying a new iMac + a dedicated display for my MBP doesn't make sense. As much as I love OSX I might switch back to window PC at home + external monitor if there's no new Mac Mini in the future.
 
Why would you want the older spec? 2.1 would future-proof your investment in the mini (support for 8k HDR for example).
I gladly accept newest version, if it doesn't rise the price too much. If there would be BTO 2.1 costing +$100, I'd choose 2.0.
But the reality is that Mini has been made from one generation old components.
Hdmi2.0 was released in late 2013. Last Mini was released late 2014.
If this is what Apple needs to make Mini profitable enough, I'm all for it.
I usually anyway buy used macs and upgrade them up to speed.
But if the next Mini will come and it has an option for powerful GPU (not doubling the cost) for pro apps, I might buy a new mini.

Seriously... a great question - one we should expand upon to say "what has happened to people, social awareness / acceptance (PC) and progress". Can't be great if everyone is walking around with a lithium battery-powered device, if everyone is looking in the palm of their hand, if every little whim and wish has to given time and consideration, if every idea gets thrown into a pot (iPhone) that has but one outcome (2-dimensional) and on and on...

Technology has infected the human balance with the environment ... first externally and then internally ... the effects will be felt from now on. For Apple, there are too many ideas about how to be ground-breaking (disruptive) without enough attention to core functionalities, standards and development from user-experience and needs ... it's an "I-generation being served by an I-company that has lost focus on "us" ... the user and corporations that rely on a path and continuance of features and capabilities that just-work.

So tired of great features being morphed into oddities and gestures for competitive reasons when "simple" is enough i.e. Touch-ID , headphone jack.

Apple reflects our society which has changed and become sensitized by every gesture - no longer black and white - straight and narrow, clear and concise - instead, a rainbow of colors and every imaginable problem to go along with it ... and progress stalls because ... well, you just can't be effective giving everyone an equal voice when you're managing a project, team or mission ... that's why Apple was better under Jobs because in the end it was his voice that mattered.

(aside) Just look at the news! When you look at our children and the power of being seen and heard around the world in the palm of a hand you begin to realize the power of the poison that inflicts the greatest harm... too much accessible information ... too fast ... too often ... too easy! It gets really scary when a child's voice speaks with the same impact as an adult and vise versa.

Ego-centric Apps and functionality, social acceptance measured in "likes", isolation and persistent visions being replayed and many more wonderful capabilities at the ready ... what hasn't happened?

If they were going to refresh the existing form factor with new CPUs, they would have done do at WWDC. If they were going to also add USB-C/TB3, they would have done so at WWDC.

That Apple is now polling Mac Mini customers, it is confirmed they do not have a new or updated model ready. Like the next Mac Pro earlier this year, they're in the evaluation stage to see if they want to make a new design. If they choose to do so (as they have chosen to do with the Mac Pro), I expect development to be in parallel with the new Mac Pro and the two will very likely be announced together.

In this event the "one more thing" was the highly anticipated device that everyone knew would be the main focus of the event.

But "it is what it is". I've come too far with Apple (since 1978) to get off the train now. :)

Yes, they wouldn't have a survey after finishing the design of new model.

I guess they don't need the Mini anymore so much for halo effect for more expensive macs. New mac users might come more from iOS users, regardless of windows. And old mac users buy ever more often laptops, so the small number of desktop buyers can be forced to buy imac. Regardless of if they like the horrible double glassy glossy screen, or not.
They probably now know pretty good estimation on how many potentional Mini buyers would not buy a new mac, if there is no mac mini anymore. Now they probably measure how many would buy mini without cannibalizing other macs.

Yes, it will probably WWDC 2018 for the new mac mini, which is almost certainly coming along with the new mac pro. I think/hope my 2012 will hold out until then.

Well played Apple ... well played! Once the iPhone joined the ecosystem the rest became history. It's the synergy, ease of backing-up and moving across devices that we just don't want to revisit - it's like going back to Payphone booths. And quietly, I suspect just as we make the break away Apple will flex it's genius once again and like a lost puppy we'll come running back.

True. Such a poor use of the iconic "one more thing" pioneered by Jobs. And the first time I saw a poop emoji, I never wanted to see another. Thanks Apple. Way to class up the presentation.
 
I just want Mac Mini with modern (Kaby Lake) Intel CPU and graphics. Preferably half of USB ports being USB-C and Thunderbolt 3 at once.

Other things I would like:
  • Non-soldered RAM
  • 4-core CPU
  • Optional dGPU (never going to happen)

So, you didn't take your kid or grandkid to see the Emoji movie?
I have a hard time now to explain to my 6-year old, why poop-jokes are not so appropriate everywhere...
