I suspect you'll be fine. Even if you reserved PAYG, the box they open has to be unlocked because you haven't told them yet whether you want an O2 or Orange PAYG (assuming your reservation went the same way as mine did) so they're all exactly the same handset, the only difference is whether the Apple employee plugs a PAYG card into your phone and activates it for you before you leave the store.I have a reservation for launch day, if I change my mind on whether I want a PAYG version or Sim-free, would they let me do that, or am I stuck with my reservation choice? Whether they'll have stock is another story.
