32g ordered 11.53 a.m. 16 June. Got 9 digit "carrier tracking number" from left hand margin of Apple's US site not the 10 digit UK number.

I did this at around 06.30 so times shown must be local. HK is 7 hours ahead.
 
Did you order a new contract or upgrade?

I ordered a new one, checking today with the DPD tracking number it would appear it has finally shipped! Should be here later today...
glad this will all be over and i'll have my shiny new iPhone soon!

I placed a web order on the 24th and the CS reps keep saying, your waiting in a queue. Cant get anymore out of them. Checking the online order tracking keeps saying 'Being readied for dispatch', its said this since the 24th.
Has your online order status changed to 'dispatched'?
 
If I order one on Apple online and it has a fault, can i return to to the Apple store in Liverpool for a refund/replacement?

No they don't. At least not in my case. I ordered two on June 15 (for a "by July 2" shipping date) and they took the money for both out of my credit card immediately. I still haven't got the phones but Apple still took the money out two weeks ago.

I've bought many Apple products from the Apple Store online and have never been charged at the time of order UNLESS they were able to dispatch the goods straight away.

I think you'll find that you are the exception to the rule.

Apple 'reserve' the funds, but they don't usually take payment until the goods are dispatched.

Did they actually take the money, or just put a hold on it (so that your available credit was reduced by that amount?)

If you're looking at "available balance" then yes you will see the money "gone", however they simply ring fence the funds to ensure the money is available and can't be spent elsewhere.
