All Google has to do now, is raise the hosting price by 30% and tell Apple that if it doesn't like it, it can go elsewhere - and threaten to close their account if it doesn't pay up in 30 days.

I read this as Apple soaking up Google’s cloud resources to such a high degree that it’s both their #1 customer and that’s still not enough to handle their data needs; indeed, they also need Azure and AWS in addition to their own data centers.

Did I miss something?

One of the latest updates we got years ago was that Apple was utilizing AWS, Azure, and Google for data storage needs. https://www.macrumors.com/2019/04/22/apple-aws-30-million-per-month/ Yep.

And there's the quote I was looking for earlier: "Apple is of course continuing to invest heavily in its own cloud infrastructure, revealing last December as part of its new Austin campus announcement that it planned to spend $10 billion over five years on U.S. data centers, including $4.5 billion by the end of 2019." -Macrumors article.

I guess you never bothered to even open, let alone read, the annual Apple Security White Paper did you?
 
What happens if google and Apple get in an argument and they pull their cloud services from Apple? That’s happened with other services and the cloud provider stops service.
 
Apple does not provide third-party cloud storage providers with the keys to decrypt user data stored on their servers, ensuring a strong level of security.

Google doesn't have access to the data. What's a shame?

Diversifying. I do the same but on a much much smaller scale.
