I would be interested in a hybrid mechanical/digital round watch.
You mean like a G-Shock or Citizen, or maybe some Breitling or Tissot models, with analog hands and digital sub-displays? Or do you want a spring-driven mechanical watch module together with a smartwatch?

The latter.

A company called something like Kairo does one. It looks very nice, though expensive. It's a mechanical watch with a digital screen that is invisible until you need it.
 
^^^^^ Kairos, yes, been hearing about it for almost two years. You guys think the Gear S or Moto360 are too big -- just wait for the Kairos. I'll bet it's as thick as an Omega chrono-GMT diver.

Payed for my salad today at Whole Foods with my apple watch and apple pay.
Afterward walked around the store a bit and saw not one apple watch. :(

Why are they so elusive here in my neck of the woods???

I tend to go to Apple Pay friendly places (because Watch), and I've yet to see any except the ones at the Apple Store and one of my coworkers (another gadget nerd)... the stranger part is I've only had a couple people even recognize/ask about it. Guess there just isn't much interest where I live.

I live in LA and work in the Entertainment business. I've seen two Watches ... one in my gym, once; and the other on a guy on a plane who may or may not live in LA.

Considering LA and the entertainment business in general is on the cutting edge of new tech, and now that the delivery times on the Watch are down to a day for almost all models, I'm really stunned that I haven't seen more after almost 3 months (especially when LA had the only store in North America that actually sold them from day one). It suggests to me that there's a completely different demographic that's embracing the latest Apple product this time, and fashionable and trendy LA is not it.

Hmm, not sure if I would completely agree though. I'm in LA too, but I've seen over a dozen since I got my watch. Sometimes I go days without seeing one, but other times I've seen up to 5 at once; even a good number of SS ones (milanese, leather loop, link). While they're definitely not super popular, a number of these people did seem to be embracing it for the "fashion/trendiness" aspect.
 
I hadn't seen any before today, but I saw three people wearing them in the security line at the airport today. One SS and two space grey sports. It confirmed my thoughts on seeing them in the store that the space grey is the only decent looking one, although it didn't look quite as good as I thought it might.
 
I haven't seen any, but then again it hasn't arrived in Denmark yet.. But apparently alot of people know how to spot one, since i've been asked about mine.
 
I saw at least 10 in Disneyland (SoCal) this weekend; most were the SG sport, with 2 SS, and one sport/blue band
 
So far I have seen surprisingly many Apple Watches in the wild. The Apple Watch has not been out for so long in Switzerland, but in the last days alone I have seen at least 7 people wearing one. At least here in Switzerland the Apple Watch must be pretty popular.

Quite a number now. I am in London though. I've used it a lot for Apple Pay recently and slowly folk are not being too surprised by it so I think a number are using that too.
 
Saw an old lady wearing the same Apple watch as me - (a white sport version) while lining up for something that other day. I didn't talk to her. She didn't look that tech savvy, so I am a little surprised she's wearing an Apple watch.
 
I've probably seen upwards of 30 here in the D.C. area, not including my own. I've seen some in business meetings and many just around town. It's certainly not uncommon to see them here.

BY FAR the most common is the Space Gray Sport. I've probably seen a dozen of them alone. I've seen a couple other sports, a few SS with Milanese loops, and a few SS with leather loops. Haven't seen a Space Black in the wild yet, nor have I seen a 38mm with Modern Buckle.
 
when i was in rome i saw this guy with a space black SS with the link bracelet and also a women with a sports white
 
Had to ask a sea world employee a question today and noticed he had the exact same watch as me (42mm space grey sport). I said nice watch and then we talked about it a little bit. That was pretty cool.
