I think you could be on to something here.
There's never a better time to up-sell and cross-sell someone than at point-of-purchase. Given, the sales for new Mac Pros will likely peak at launch for the first few weeks, if I was the product manager for the Mac Pro, I'd want to ensure there were plenty of high-margin upsell items in the BTO list to maximize profits during those lucrative few weeks.
I could see them waiting for the new Nvidia cards AND the new 27" monitors before launching the new Mac Pro just for this very reason.
Only time will tell for sure!
EDIT: The timing of the iPad launch is also an interesting factor. Of course, if you are Apple, you want the iPad to get as much attention around launch as possible and you NEED it to fly out of the gate with a bang and big sales. You really don't want folks with limited discretionary funds for a computer going "Should I buy an iPad or should I buy a MacBook or a Mac Pro". You want all of those folks to buy an iPad now... it's super important with a new market defining niche like this to come out of the gate with serious momentum, even if that means cannibalizing a small percentage of traditional product line sales for the period surrounding it. The enormous spill over effect will make up for it in gross quantities in very short order, and then when you've satisifed market appetite for iPad's you lure them into new MacBooks and Mac Pro's as well.![]()

One reason the new Mac Pros may have been delayed is they may need OS X 10.6.3. So Apple may be holding the boxes until it formally releases the software (should happen soon, based on frequency of beta releases).
Or not. Everyone else is speculating as to time-frames and reasons. I thought I'd throw that one out there.
Looks like my wait is over.. finally the Apple store in Oz has put down some decent priced Pros and it looks like they had more than 1 coz I bought 1 and it's still available online.
For a moment I was looking at building a Hackintosh.
